Correctional Food Service Manager III

Description of Work

Anticipated Vacancy: This position #60067493 is located at Caledonia Correctional Institution in Halifax County, NC. Employees in this class serves as the manager of a large scale food operation and responsibilities include management of a minimum custody facility managed within the scope of the larger institution. Employees in this class direct the preparation and serving of food to inmates at mid-sized or larger institutions. Work involves the supervision of staff and inmates and the performance of responsibilities in all phases of food management. These facilities may have: restrictive housing, a second full service operation that is supervised by this position, medical acuity inmates, produce and feed kosher meals, a processing unit, off site feeding, such as to a lower custody level, jail, or to other off-site locations. Employees in this class are responsible for planning as related to food ordering, menu planning, service production schedules, making staffing assignments and schedules, sanitation, and Food Manager Systems computer records. Employees have oversight over food production work rules, methods, and procedures. This is a certified position and must successfully complete all basic/annual training to include unarmed self-defense, firearms, and CPR. Successful completion of pre-employment academic and psychological testing is required. Drug and TB testing is required

Documented knowledge of large scale food production and food service activities Documented supervision of employees and/or inmate workers

Minimum Education and Experience Requirements

High school or General Educational Development (GED) diploma and six years of experience in institutional food preparation and food services, in management of a commercial food service operations, or three years as a Correctional Food Service Supervisor; or an equivalent combination of education and experience. Necessary Special Qualifications Must be eligible for certification by the North Carolina Criminal Justice Education & Training Standards Commission.
